I just don't use video, but happy about video features. I learned from this forum that EVF + LCD need video features, and the person buying my used-sorry, pre-owned- camera after a few years will certainly want them!
So, if I could buy a "stills only", I wouldn't buy it, even though I never shoot videos.

They drive like they are on the Periferique or the Place Charles de MFGA, formerly known as the Place de l’Étoiles. As @koenkooi states in NL we have both frontside and backside illuminated roundabouts. Obviously the exact specs you're listing are funny business, but why (technically, business wise, marketing, etc) can't Canon offer more custom build options? Have a single camera platform for $4-$7k. Identical PCB, same processors, IBIS, shutter module, EVF—hold as much as possible the same. Then select:
Body Style
- Gripped "Max": More expensive, different power board, higher voltage for driving longer lenses, better cooling, heavier, best ergonomics
- Standard "Pro": body has shorter runtimes (battery and thermals), cheaper, lighter
- If I wanted to be really cheeky, you could even trial balloon "cinema" (active cooling) or "street" (sealed battery, slim) SKUs. Mark the shit up out of them.
Sensor
- Low resolution "Action" (~25mp), max readout speed, best AF
- Medium resolution "Pro" (~50mp), good readout speed, good AF
- High resolution "Studio" (~75+ mp), likely BSI but not stacked, max DR (??), speed/video/AF penalties, probably more expensive, lowest volume. Essentially a "studio" sensor?
You could probably even sell some upgrades that don't much affect packaging like charging +$500 for a doubling of buffer size. Maybe different EVFs?
I don't want to be naive about the challenges, but is that really such a wild request from consumers in today's tech landscape?
The volume of custom build camera’s is not likely to be very high, meaning less automating in build/ assembly process, more testing and a separate logistics chain (from ordering website with a product configurator to shipping to customer/retailer, servicing and repair). And upfront development investment to make a more modular camera design and firmware. Clearly, Canon (and everybody else) have decided that this is not for them.
If I should venture a guess, it would be that it's the complexity of verifying that all the combinations of hardware works well together that is the main issue.
